Billecart-Salmon Tour with Chef de Caves Florent Nys

The stunning exterior of the Billecart-Salmon Maison. The Maison is located in the charming town of Mareuil-sur-Ay, France. As I toured the property I saw the extensive spread of this winery including the main building (shown above), their winemaking facility (shown below) and other buildings scattered throughout this quaint town. The setting feels super intimate, family-owned and local which is exactly what Billecart-Salmon is. Read more about my visit below….

Below is an overview of the history of Billecart-Salmon:

1700s: The Billecart family was established in the village of Mareuil-sur-Aÿ in Champagne.

1818:Nicolas-François Billecart met Elisabeth Salmon who fell in love and were soon married. As a wedding gift from the Salmon family, they were given a small plot of land in , in Mareuil-sur-Aÿ, Champagne. With this land they founded a Champagne House which would become a beacon of purity and excellence. 

They decided to found a Champagne House with this land that was above all a beacon of excellence and purity. Nicolas-François and Elisabeth were quite ahead of the times with the Champagne House, as ‘Sparkling Champagne’ was still in its early days and a bit unknown.

1952: Champagne Billecart-Salmon begins utilizing the practice of “double cold settling”, which they are now know
