Journeyman Meat Co is one of the newest culinary arrivals to Healdsburg opening in the Spring of 2018. It is a butchery shop, salumeria and tasting bar sharing salumeria, other culinary bites, wines and more! The charming seating space surrounded with bright well lit street views. It’s quite inviting, you may find yourself never wanting to leave like I did during my multiple visits to Journeyman Meat Co.
In addition to making their own salumeria and other meats, they have quite a yummy menu including Pizza, which I’ve had twice now and adore, daily sandwiches, charcuterie, salads and more!

Also, they have their own cattle which is where most of their meats come from so the Burger I enjoyed (see below) is an Estate Burger since the beef is from the family estate. I loved it and the rich history of the family traveling to Italy to learn the butcherie techniques they use. Unlike most meat aging which can take 14 days, at Journeyman Meat Co they do much slower aging so instead of 14 days their meat would age for 35 days. Whatever technique they’re using I’m a fan!
The back half of the restaurant which has a charming wine bar with 4-5 seats where I suggest sitting if you want to engage with Pete and Cathy Seghesio’s (the owners) or any of their knowledgeable friendly staff in a bar counter setting. I sat here during my recent visit with my sister Jeannine, and we literally never left. A glass of wine and some nibbles turned into sharing a burger, pizza, and charcuterie. The food, wine and team here are so so fabulous, it’s hard not to fall in love…
Owners and hosts Pete and Cathy Seghesio. I have met them during both of my visits and also at Charlie Palmer’s Pigs & Pinot Noir event, read more about that here, and they are so amazing. During both visits they were both working behind the counter, greeting guests, cleaning up, serving wine & food. This is truly a family business. In addition to the butcher assortment, they are also serving some of their wines which I had the chance to try. Clearly this family does both food & wine very well and is passionate about a genuine hospitality experience for their guests.
