Having explored over 45 countries, this winter, my boyfriend and I were eager to discover a new destination together. Our search began with a quest for the perfect January surf spot, a necessity for him, coupled with the allure of rich cultural experiences and the comfort of a luxury hotel, which is my vacation preference. Our criteria led us to choose Nicaragua, a country new to both of us. Many questioned our choice, asking about safety and why Nicaragua. We found it to be not only exceedingly safe but also a fantastic place for travel, offering stunning beauty, a deep historical tapestry (with Granada being the oldest city in Central America), and an exceptional luxury stay at Rancho Santana. Nicaragua Rancho Santana Resort
Rancho Santana is a beautiful resort located in Nicaragua that has absolutely breathtaking views, amazing food, good service (I would say it’s a 4 Star Hotel Level not quite 5 in terms of service), and an overall spectacular experience. This luxurious resort really does have it all.Ā Expect 4-5 Star Accommodations at less than half the price of what you’d find in Mexico, Hawaii or the Caribbean.
Guests can rent their stunning villas or stay at the hotel. We stayed at the hotel but next time I would go with a group and rent a 3 or 4 bedroom villa. Villa guests enjoy all of the hotel amenities and it’s a great way to travel with a group, have your own house and a bit more space than a hotel room.

Rancho Santana’s gorgeous hotel rooms
One truly special part of this resort is the gorgeous rooms they have.Ā We were on a ground floor room with ocean views and beautiful interior design. The rooms have a patio (facing the ocean) which were great doubling as a living room area. We enjoyed sunsets from here, played games and read and relaxed.
Looking for more space, get a suite with an additional living room (inside).
Even More Fun Things to Do
There is so much to do on the grounds as well as in the surrounding area. From great restaurants, to3 pools, the beach, horseback riding, yoga, a gym they really have it all at Rancho Santana, Nicaragua.

My favorite thing to do on vacation is sit by the pool and read. As someone who has an extremely busy, go go go life at home on vacation I’m beyond lazy. I read a lot, usually 2-3 books, sleep, eat, drink, work out and decompress. This resort was perfect for all of the above.
The Spectacular Yoga with Julia Knoth
One of the best parts about Rancho Santana besides the stunning hotel and resort are their activities. I was in heaven enjoying Yoga during this trip (which is an extra $20 USD or so, but beyond worth it). I was so lucky I showed up to the two classes and both times I was the only guest so enjoyed a Private Yoga lesson with the beyond talented Julia Knoth who was my instructor. We quickly connected over Yoga, both being former New Yorkers. Be sure to spoil yourself with a few yoga classes (hopefully with Julia) during your stay at Rancho Santa Nicaragua.

Robert and I enjoyed a nature hike (complimentary for guests). The hike was about 1.5 hours and took us to one of the private Rancho Santana Beaches. They have 5 beaches guests can enjoy.
Dining at Rancho Santana
One of the most amazing aspects of the hotel was the dining. The food was all INCREDIBLE and very well priced unlike some resorts where a salad is $28 USD. The amazing ocean front views at La Boquita. This menu was amazing it had Paella and some of the most delicious sushi I’ve ever had (with fresh fish caught daily). Even if you’re not staying at Rancho Santana I recommend visiting their restaurants you will fall in love!
La Taqueria at the Beach
If you’re looking for some great food this is the place to have it. Beautiful beach views and delicious food, what more could you ask for?
